Vegan Gluten-Free Quesadillas with Black Beans and Corn
Ingredients
- Old El Paso white corn tortillas
- tomato paste
- mashed black beans mixed with chili powder
- corn
- vegan cheese
Extra sides
- smashed avocado
- mashed black beans mixed with chili powder
- corn
Preparation
For a pack of 10 tortillas, spread all 10 with tomato paste.
On 5 of the tortillas, layer the fillings finishing with the cheese and then place the other 5 on top, press down gently to seal.
On a non-stick frying pan, cook quesadillas one at a time for 2-3 minutes each side over medium heat or until both sides are golden.
Cut, serve, and enjoy.
