Vegan Gluten-Free Quesadillas with Black Beans and Corn

Ingredients

  • Old El Paso white corn tortillas
  • tomato paste
  • mashed black beans mixed with chili powder
  • corn
  • vegan cheese

Extra sides

  • smashed avocado
  • mashed black beans mixed with chili powder
  • corn

Preparation

  1. For a pack of 10 tortillas, spread all 10 with tomato paste.

  2. On 5 of the tortillas, layer the fillings finishing with the cheese and then place the other 5 on top, press down gently to seal.

  3. On a non-stick frying pan, cook quesadillas one at a time for 2-3 minutes each side over medium heat or until both sides are golden.

  4. Cut, serve, and enjoy.
