Vegan Huevos Rancheros with Black Beans and Salsa

Ingredients

  • Corn Tortillas
  • Organic Refried Black Beans
  • Garlic & Onion Powder
  • Vegan Cheese
  • Vegan Eggs
  • Salsa
  • Cilantro
  • Avocado
  • Salt & Pepper to taste

Preparation

  1. Warm the Tortillas on each side in a hot cast iron pan

  2. Spread a layer of Beans that have been heated and mixed with Salt, Pepper, Garlic & Onion Powder onto the Tortillas

  3. Add a layer of Cheese

  4. Top with the Vegan Eggs that have been pan fried for about 4-5 minutes

  5. Top with Salsa, chopped Cilantro and serve with Avocado
