Vegan Huevos Rancheros with Black Beans and Salsa
Ingredients
- Corn Tortillas
- Organic Refried Black Beans
- Garlic & Onion Powder
- Vegan Cheese
- Vegan Eggs
- Salsa
- Cilantro
- Avocado
- Salt & Pepper to taste
Preparation
Warm the Tortillas on each side in a hot cast iron pan
Spread a layer of Beans that have been heated and mixed with Salt, Pepper, Garlic & Onion Powder onto the Tortillas
Add a layer of Cheese
Top with the Vegan Eggs that have been pan fried for about 4-5 minutes
Top with Salsa, chopped Cilantro and serve with Avocado
