Vegan Lemon Dessert with Oats

Ingredients

  • Oats
  • Vegan coconut yogurt

Lemon layer

  • 2 tablespoons vanilla pudding powder
  • 1/2 cup water
  • Juice of two lemons
  • 2-3 tablespoons xylitol
  • A pinch of turmeric

Preparation

  1. Boil the lemon juice.

  2. Mix the vanilla pudding powder in water.

  3. Pour the mixture into the boiling lemon juice.

  4. Add the xylitol and turmeric, then cook until thickened.

Assembly

  1. Layer the lemon mixture with oats and vegan coconut yogurt in serving dishes.
