Vegan Pizza with Dairy-Free Mozzarella and Homemade Crust

Ingredients

Dairy-free mozzarella

  • 1 cup of cashews
  • 1 T of lemon juice, fresh
  • 2 Tbsp nutritional yeast
  • 2 tsp agar powder
  • 2 T of tapioca powder
  • 1 tsp of onion powder, 1 tsp of garlic powder, and other spices like vegetable cubes (organic)
  • 2 T of melted coconut oil
  • 1 cup water

Pizza crust

  • 3 cups flour
  • 2 1/4 tsp of active yeast
  • 1 T of coconut sugar
  • 3/4 teaspoon salt
  • 1 tsp of onion powder, 1 tsp of garlic powder, 1 tsp of dried Italian seasoning, 1 T of vegetable stock seasoning
  • 2 Tablespoons olive oil
  • 1 cup of warm water

Preparation

  1. Blend all the ingredients in a blender, scraping down the sides.

  2. Place the thick liquid in a pot and simmer, stirring continuously until thickened, about 5 minutes. Taste and adjust seasonings if needed.

  3. Warm up your oven and place the pizza stone inside for at least 30 minutes.

  4. Add yeast to warm water, add sugar, stir briefly, and leave covered in a warm place for 30 minutes.

  5. Add all remaining ingredients to a large bowl.

  6. Add olive oil and yeast mixture. Adjust consistency with flour or water if necessary.

  7. Roll out the dough.

  8. Place marinara sauce and cheese dollops on the dough and cook for 7 minutes.

  9. Add sautéed vegetables and more cheese, then cook for another 14 minutes.
