Vegan Sheet Pan Dinner with Vegetables

Ingredients

  • 1 pound Brussels sprouts, halved or quartered
  • 1 pound new potatoes
  • 2 Field Roast vegan smoked apple sausages, sliced
  • 1 small yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 15 ounces drained black beans
  • A handful of diced red pepper
  • 1 teaspoon kosher salt
  • Cajun seasoning to taste

Preparation

  1. Preheat oven to 425°F.

  2. Line a baking sheet with foil and spray with oil.

  3. Mix all of the ingredients in a bowl and spread in a single layer on the baking sheet.

  4. Bake for 20 minutes, then flip.

  5. Bake for an additional 15 to 20 minutes.

  6. Add 15 ounces of drained black beans.

  7. Optionally add a handful of diced red pepper.

  8. Sprinkle 1 teaspoon kosher salt on top.

  9. If desired, add Cajun seasoning.

  10. Serve and enjoy.
