Vegan Tofu Fried Rice

Ingredients

  • 3 tbs of cooking oil
  • 1 large onion, diced
  • 2 cups of corn
  • 3.5 oz of puffed tofu
  • 3 cups of rice, cooked
  • 1 cup of peas
  • 2 tbs of chili oil
  • 4 tbs of soy sauce
  • 1 tbs of black soy sauce
  • 1 tbs of sweet soy sauce
  • 1 green onion, chopped

Preparation

  1. In a large pan over medium heat, add cooking oil, onion, corn, and tofu.

  2. Cook for 5-7 minutes or until onions are caramelized.

  3. Add cooked rice and stir. Cook for 2-3 minutes.

  4. Add peas and stir. Cook for 2-3 minutes.

  5. In a small bowl, combine chili oil, soy sauce, black soy sauce, and sweet soy sauce.

  6. Add the sauce to the pan and mix well.

  7. Cook for an additional 2-3 minutes.

  8. Top with fresh green onion and fried chili oil.

  9. Enjoy.

Notes

  1. This stir fry is great for using up fridge leftovers and experimenting with different soy sauces for unique flavors.
