Vegan Tofu Fried Rice
Ingredients
- 3 tbs of cooking oil
- 1 large onion, diced
- 2 cups of corn
- 3.5 oz of puffed tofu
- 3 cups of rice, cooked
- 1 cup of peas
- 2 tbs of chili oil
- 4 tbs of soy sauce
- 1 tbs of black soy sauce
- 1 tbs of sweet soy sauce
- 1 green onion, chopped
Preparation
In a large pan over medium heat, add cooking oil, onion, corn, and tofu.
Cook for 5-7 minutes or until onions are caramelized.
Add cooked rice and stir. Cook for 2-3 minutes.
Add peas and stir. Cook for 2-3 minutes.
In a small bowl, combine chili oil, soy sauce, black soy sauce, and sweet soy sauce.
Add the sauce to the pan and mix well.
Cook for an additional 2-3 minutes.
Top with fresh green onion and fried chili oil.
Enjoy.

This stir fry is great for using up fridge leftovers and experimenting with different soy sauces for unique flavors.
