Butterfly Baby Aubergines with Coriander

Ingredients

  • rapeseed oil
  • baby aubergines (split cut)
  • Himalayan salt
  • black pepper
  • coriander
  • Tabasco

Preparation

  1. Use rapeseed oil in a normal frying pan and heat it over low heat.

  2. Place the split cut baby aubergines in the pan and fry for 10-15 minutes.

  3. Add Himalayan salt, black pepper, and coriander to the pan.
