Butterfly Baby Aubergines with Coriander
Ingredients
- rapeseed oil
- baby aubergines (split cut)
- Himalayan salt
- black pepper
- coriander
- Tabasco
Preparation
Use rapeseed oil in a normal frying pan and heat it over low heat.
Place the split cut baby aubergines in the pan and fry for 10-15 minutes.
Add Himalayan salt, black pepper, and coriander to the pan.
Add a little Tabasco for tanginess.
