Homemade Vegan Macadamia Cream Cheese

Ingredients

  • 1 cup raw, unsalted macadamia nuts
  • juice of 1/2 lemon
  • 1 teaspoon Himalayan salt
  • 1/2 cup finely chopped chives or dill
  • green parts of spring onions
  • 1 tablespoon extra virgin coconut oil

Optional additions

  • nutritional yeast
  • black pepper

Preparation

  1. Soak the macadamia nuts in water for 2 hours.

  2. Drain the nuts.

  3. Blend the drained nuts with lemon juice, salt, and coconut oil until smooth.

  4. Stir in the chopped chives or dill, green parts of spring onions, and any optional ingredients.

  5. Refrigerate the mixture for at least 22 hours to set and develop flavor.
