Dreamy Cashew Cheese Dip
Ingredients
- 1 cup cashews, soaked in filtered water for 4 hours or overnight, drained and rinsed
- 2 tbsp nutritional yeast
- 2 tbsp fresh lemon juice
- 1 garlic clove, crushed (1 large clove if you love garlic)
- ½ tsp sea salt, add more to taste
- ¼ tsp freshly ground black pepper
- ¼ cup filtered water – more if needed
- 1 loosely packed tbsp chives or dill (optional)
Preparation
Place the cashews, nutritional yeast, lemon juice, garlic, salt and pepper in a food processor.
Pulse to break down the cashews until they form a coarse but wet consistency.
Scrape the sides down into the processor and turn on consistent setting.
While blending, add the water and continue to process for about 1-2 minutes.
The consistency should be similar to hummus, so you may need to add a little dash more water.
Add lemon, salt and pepper to taste, and fresh cut herbs.
