Gluten-Free Toast with Macadamia Cream Cheese

Ingredients

  • 1 cup raw, unsalted macadamia nuts
  • Juice of 1/2 lemon
  • 1 teaspoon Himalayan salt
  • 1/2 cup chives or dill
  • 1 tablespoon extra virgin coconut oil

Optional

  • Nutritional yeast
  • Black pepper

Preparation

  1. Presoak the macadamia nuts in water for 2 hours.

  2. Drain the soaked nuts.

  3. Finely chop the chives or dill.

  4. In a blender, combine the drained nuts, lemon juice, salt, coconut oil, and chopped chives or dill. Blend until smooth.

  5. If using optional ingredients, add nutritional yeast and black pepper to the mixture and blend again until well incorporated.

  6. Toast a slice of gluten-free bread.

  7. Spread the macadamia cream cheese onto the toasted bread and serve.
