Gluten-Free Macadamia Cream Cheese

Ingredients

  • 1 cup raw, unsalted macadamia nuts (presoak for 2 hours prior to aid digestion & make the cheese creamier)
  • juice of 1/2 lemon
  • 1 teaspoon Himalayan salt
  • 1/2 cup finely chopped chives or dill
  • 1 tablespoon extra virgin coconut oil

Optional additions

  • nutritional yeast
  • black pepper

Preparation

  1. Soak the macadamia nuts in water for 2 hours

  2. Drain the soaked nuts

  3. In a blender or food processor, combine the drained nuts, lemon juice, Himalayan salt, chopped chives or dill, and coconut oil. Blend until smooth and creamy

  4. If desired, add nutritional yeast and black pepper to taste, and blend again until well incorporated
