Quick Mushroom Soup with Garlic and Celery

Ingredients

  • 2-3 handfuls of mushrooms
  • 1 crushed garlic clove
  • half a celery stick
  • 1 soup stock (e.g., Kallo low salt)
  • Himalayan salt
  • black pepper
  • water (just enough to half immerse)
  • coriander for garnish

Preparation

  1. Place 2-3 handfuls of mushrooms in a small pressure cooker.

  2. Add 1 crushed garlic clove.

  3. Add half a celery stick.

  4. Add 1 soup stock.

  5. Add Himalayan salt and black pepper.

  6. Add just enough water to half immerse the mushrooms.

  7. Cook for 5-8 minutes.

  8. Garnish with coriander.

Tips

  1. The entire process takes about 15 minutes from start to finish.

  2. Mushrooms are low in calories and high in selenium, vitamin D, protein, vitamin C, and iron, making this soup both tasty and nutritious.
