Detox Quinoa Salad with Beets and Turmeric

Ingredients

  • 1 teaspoon freshly grated turmeric
  • 1 teaspoon freshly grated ginger
  • 3 tablespoons freshly grated carrots
  • 2 tablespoons freshly grated beetroot
  • 1 tablespoon organic cold pressed sesame seed oil
  • 1 tablespoon freshly grated apple
  • 1 tablespoon Ume plum seasoning
  • 1 teaspoon black pepper
  • 2 tablespoons sesame seeds
  • 1 cup cooked quinoa
  • Lamb's lettuce
  • Pepper
  • Tomatoes
  • Avocado
  • 1/2 cup soaked wakame seaweed

Preparation

  1. Cook the quinoa in water until tender and fluffy.

  2. Grate the turmeric, ginger, carrots, beetroot, and apple.

  3. In a bowl, combine the grated turmeric, grated ginger, grated carrots, grated beetroot, sesame seed oil, grated apple, Ume plum seasoning, black pepper, and sesame seeds.

  4. Mix all these ingredients together thoroughly.

  5. Add the cooked quinoa to the mixture and stir to combine.

  6. Soak the wakame seaweed in water until softened.

  7. Arrange the quinoa mixture in the center of a plate.

  8. Add lamb's lettuce, pepper, tomatoes, avocado, and soaked wakame seaweed around or on top of the mixture.

  9. Sprinkle additional sesame seeds, Ume plum seasoning, and sesame seed oil over the salad.
