Rainbow Bowl with Quinoa and Veggies
Ingredients
- quinoa
- vegetable broth
- green peas
- red cabbage
- carrot
- handful of mixed seeds
Hummus components
- 1 can chickpeas
- 3 tbsp sunflower seed butter
- lemon juice
- turmeric
- salt
- pepper
Preparation
Cook quinoa in vegetable broth until tender.
Make hummus by blending chickpeas with sunflower seed butter, lemon juice, turmeric, salt, and pepper until smooth.
Chop red cabbage and carrot into bite-sized pieces.
Assemble all ingredients in a bowl for serving.
