Vegan Mediterranean Quinoa Salad

Ingredients

  • 1 handful arugula
  • 1 handful spring mix
  • 1/2 cup cooked quinoa
  • cucumbers
  • cherry tomatoes
  • avocado
  • raw sunflower seeds
  • 1 scoop tabouli salad
  • balsamic glaze
  • fresh ground pepper
  • hummus
  • 2 pieces vegan gluten-free bread

Preparation

  1. Combine arugula, spring mix, cooked quinoa, cucumbers, cherry tomatoes, avocado, sunflower seeds, and tabouli salad in a bowl. Top with hummus.

  2. Drizzle with balsamic glaze and season with fresh ground pepper.

  3. Toast the bread if desired.

  4. Scoop the salad onto the toasted bread and add more hummus for serving.
