Sesame Tofu Salad with Ginger-Soy Dressing
Ingredients
- 2 cups leafy greens
- 1 cup sesame tofu
- 1/2 cup shredded carrots
- 1/2 cup shredded red cabbage
- 1/2 cup sliced cucumbers
- 1/2 cup snap peas
- 1/4 cup shelled edamame
- 1/4 cup shaved almonds
- 2 Tbsp olive oil
- 1 Tbsp water
- 1 Tbsp lemon juice
- 1 Tbsp soy sauce
- 1 Tbsp freshly grated ginger
- 1/2 Tbsp peanut butter
- 1/2 Tbsp agave nectar
- 1/2 tsp sesame oil
Preparation
Arrange all salad ingredients in a large serving bowl.
Mix your dressing ingredients together and pour over your salad.
