Sesame Tofu Salad with Ginger-Soy Dressing

Ingredients

  • 2 cups leafy greens
  • 1 cup sesame tofu
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1/2 cup sliced cucumbers
  • 1/2 cup snap peas
  • 1/4 cup shelled edamame
  • 1/4 cup shaved almonds
  • 2 Tbsp olive oil
  • 1 Tbsp water
  • 1 Tbsp lemon juice
  • 1 Tbsp soy sauce
  • 1 Tbsp freshly grated ginger
  • 1/2 Tbsp peanut butter
  • 1/2 Tbsp agave nectar
  • 1/2 tsp sesame oil

Preparation

  1. Arrange all salad ingredients in a large serving bowl.

  2. Mix your dressing ingredients together and pour over your salad.

  3. Toss well, serve, and enjoy 😋
