Farmer's Market Salad with Balsamic Dressing
Ingredients
- spicy radishes
- yellow cherry tomatoes
- pungent and crispy red onion
- spicy arugula
- mixed greens
- buttery avocado
Balsamic dressing
- 1/2 cup good quality extra virgin olive oil
- 1/4 cup balsamic vinegar
- 2-3 teaspoons Dijon mustard
- 2-3 teaspoons maple syrup or agave
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- 1 clove minced garlic (optional)
Preparation
Shake all dressing ingredients well in a sealed container.
Taste and adjust seasonings to your liking.
Assemble the salad greens and vegetables in a bowl
Drizzle with the balsamic dressing and add avocado
