Greek Fig Arugula Salad

Ingredients

  • 2 medium bags of baby arugula
  • 6 medium mission figs
  • 1/3 cup roasted pecans
  • 1/2 cup vegan feta
  • 1/2 cup blackberries

Vinaigrette

  • 1-1/2 teaspoons minced shallots
  • 1 teaspoon minced garlic (optional)
  • 1-1/2 tablespoons balsamic vinegar
  • 1 teaspoon of maple syrup
  • 1/8 teaspoon kosher salt or fine sea salt
  • 1/8 teaspoon freshly-ground black pepper
  • 3 tablespoons avocado oil

Preparation

  1. Assemble the salad then make the vinaigrette.

  2. In a small bowl, stir together shallots, garlic, 1 tablespoon vinegar, maple syrup, salt, and pepper.

  3. Slowly drizzle in avocado oil, whisking, until emulsified.

  4. Taste the dressing. If you like it to have a more tart flavor, add an additional 1 to 1-1/2 teaspoons vinegar.

  5. Season to taste with additional salt and pepper
