Improved Sweet Potato Breakfast Mug Cake with Chocolate Chips

Ingredients

  • 1/2 cup mashed sweet potato
  • 1 egg
  • dark chocolate chips

Optional additions

  • sweetener
  • cinnamon

Toppings

  • Greek yogurt
  • blueberries
  • sunbutter
  • honey
  • cinnamon
  • chocolate granola

Preparation

  1. Cook and mash 1/2 cup of sweet potato, for example by microwaving it.

  2. In a bowl, combine the mashed sweet potato, one egg, and some dark chocolate chips.

  3. Optionally, add sweetener or cinnamon and mix well.

  4. Beat the mixture together.

  5. Microwave for about 3 minutes until done.

  6. Top with Greek yogurt, blueberries, sunbutter, honey, cinnamon, and chocolate granola.
