Improved Sweet Potato Breakfast Mug Cake with Chocolate Chips
Ingredients
- 1/2 cup mashed sweet potato
- 1 egg
- dark chocolate chips
Optional additions
- sweetener
- cinnamon
Toppings
- Greek yogurt
- blueberries
- sunbutter
- honey
- cinnamon
- chocolate granola
Preparation
Cook and mash 1/2 cup of sweet potato, for example by microwaving it.
In a bowl, combine the mashed sweet potato, one egg, and some dark chocolate chips.
Optionally, add sweetener or cinnamon and mix well.
Beat the mixture together.
Microwave for about 3 minutes until done.
Top with Greek yogurt, blueberries, sunbutter, honey, cinnamon, and chocolate granola.
