PB and Banana Stuffed French Toast

Ingredients

  • 2 slices of sourdough
  • Peanut butter
  • 1 banana
  • 1 egg
  • 1/2 cup milk of choice
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla

Preparation

  1. In a shallow bowl big enough to fit the bread, whisk the egg then add milk, cinnamon, and vanilla and whisk together. Optionally add a little sugar for a sweeter breakfast.

  2. Make a peanut butter and banana sandwich: add peanut butter to one side of the bread, add banana coins to the other side, and combine into a sandwich.

  3. Dip the sandwich in the French toast mixture, allowing the bread to soak it in.

  4. Heat a skillet over medium heat, add butter or coconut oil, then place the sandwich in the skillet.

  5. Cook for 3-4 minutes, then flip and cook for another 3-4 minutes.

  6. Remove from the skillet and serve on its own or topped with honey or maple syrup.
