Peanut Butter and Banana Stuffed French Toast

Ingredients

  • 2 slices of sourdough bread or any bread
  • Peanut butter
  • 1 banana
  • 1 egg
  • 1/2 cup milk of choice
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla

Preparation

  1. In a shallow bowl big enough to fit the bread, whisk the egg then add milk, cinnamon, and vanilla and whisk together. Optionally add a little sugar for a sweeter breakfast.

  2. Make a peanut butter and banana sandwich by adding peanut butter to one side of the bread, banana coins to the other, combine into a sandwich, then dip in the French toast mixture and let the bread soak it in.

  3. Heat a skillet over medium heat, add butter or coconut oil, then place the sandwich in and cook for 3-4 minutes, flip, and cook for another 3-4 minutes.

  4. Remove and eat either on its own or topped with a little honey or maple syrup.
