Stuffed Chocolate Peanut Butter Banana French Toast
Ingredients
- 8 pieces sourdough bread or any other kind of bread of choice⠀
- 2 vegan eggs made with earth island vegan eggs
- 1 cup oat milk or other non-dairy milk⠀
- 1 tbsp maple syrup⠀
- 1 tsp vanilla⠀
- 1 tsp cinnamon⠀
- 1 scant cup peanut butter⠀
- 1 tbsp cocoa powder⠀
- 1.5 bananas, sliced⠀
- maple syrup to serve⠀
- fresh fruit to serve⠀
Preparation
Whisk together the vegan eggs according to package instructions in a wide, shallow dish
Add the oat/nut milk, vanilla, cinnamon and maple syrup and whisk well to combine
Dip and soak each piece and each side of sourdough bread into the egg mixture
Place the soaked pieces of bread on a separate plate
Heat a large non-stick frying pan over medium heat
Once hot, add soaked bread pieces (4 at a time usually) to the pan, and cook for 4-5 minutes a side until browned
Add cooked french toast pieces to a warming oven while you pan fry the remaining pieces
Meanwhile, mix peanut butter and cocoa powder until well combined
To assemble the stuffed french toast, spread 1 tbsp of the chocolate peanut butter onto each piece of cooked french toast, and layer half the pieces with sliced banana
Make 4 sandwiches out of the 8 pieces of french toast and serve with maple syrup, fresh fruit, and any other desired toppings
