Peanut Butter and Banana Stuffed French Toast

Ingredients

  • 2 slices of sourdough bread
  • Peanut butter
  • 1 banana
  • 1 egg
  • 1/2 cup milk of choice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Preparation

  1. In a shallow bowl big enough to fit the bread, whisk the egg then add milk, cinnamon, and vanilla and whisk together; optionally add a little sugar for a sweeter breakfast.

  2. Make a peanut butter and banana sandwich by spreading peanut butter on one side of the bread, adding banana slices to the other side, and combining into a sandwich.

  3. Dip the sandwich in the French toast mixture, allowing the bread to soak it in.

  4. Heat a skillet over medium heat, add butter or coconut oil, then place the sandwich in and cook for 3 to 4 minutes.

  5. Flip the sandwich and cook for another 3 to 4 minutes.

  6. Remove from the skillet and serve either on its own or topped with honey or maple syrup.
