Easy Gluten-Free Banana Pancakes
Ingredients
- 1 banana
- 1 egg
- 1/2 cup gluten free rolled oats
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- Sprinkle of salt
Optional
- Scoop of protein powder
Preparation
Blend all ingredients together in a blender on low to medium speed.
Grease a skillet over medium-low heat.
Add butter, ghee, or coconut oil to the skillet.
Pour the batter into the skillet and shape into mini pancakes for easier flipping.
Cook for 2-3 minutes, then flip and cook for another 1-2 minutes.
Remove from heat and serve.

Top with banana slices, mini chocolate chips, and maple syrup for extra flavor.
