Spinach Quinoa Salad with Chickpeas and Avocado

Ingredients

  • 1 cup baby spinach
  • 1/2 cup garlic quinoa
  • 1/2 can washed chickpeas
  • 1/3 cup thinly sliced red onion
  • 1 serving crumbled mozzarella
  • 1/2 avocado
  • 1/2 thinly sliced honey crisp apple
  • 1/4 cup lightly salted almonds coated and baked in maple syrup

Preparation

  1. Combine all salad ingredients in a bowl.

  2. Top with homemade balsamic vinaigrette.
