Spinach Quinoa Salad with Chickpeas and Avocado
Ingredients
- 1 cup baby spinach
- 1/2 cup garlic quinoa
- 1/2 can washed chickpeas
- 1/3 cup thinly sliced red onion
- 1 serving crumbled mozzarella
- 1/2 avocado
- 1/2 thinly sliced honey crisp apple
- 1/4 cup lightly salted almonds coated and baked in maple syrup
Preparation
Combine all salad ingredients in a bowl.
Top with homemade balsamic vinaigrette.
