Blue Ocean Slice

Ingredients

  • 1 cup of almonds
  • 1 cup of rolled oats
  • 1 cup of medjool dates (soaked in boiling water for 10 min)
  • 1 tsp of vanilla extract
  • a sprinkle of cinnamon
  • ocean layer:
  • 2 cups of cashews, soaked in boiling water for approx 4 hours
  • 1 tsp of unicorn superfoods blue spirulina
  • 1/4 cup of coconut oil, melted
  • 1/4 cup of maple syrup
  • 1 tsp of vanilla extract
  • 2 tablespoons of lemon juice

Preparation

  1. Blend all ingredients together, once combined, spread over the base and place in the freezer for at least 3 hours

  2. Remove mousse from the fridge and spread over the ocean layer. I only had one mousse which covered approx 1/2 the slice, so use two for full coverage

  3. Place it in the freezer to set for approx 30 min then cut and store in the fridge
