Blue Ocean Slice
Ingredients
- 1 cup of almonds
- 1 cup of rolled oats
- 1 cup of medjool dates (soaked in boiling water for 10 min)
- 1 tsp of vanilla extract
- a sprinkle of cinnamon
- ocean layer:
- 2 cups of cashews, soaked in boiling water for approx 4 hours
- 1 tsp of unicorn superfoods blue spirulina
- 1/4 cup of coconut oil, melted
- 1/4 cup of maple syrup
- 1 tsp of vanilla extract
- 2 tablespoons of lemon juice
Preparation
Blend all ingredients together, once combined, spread over the base and place in the freezer for at least 3 hours
Remove mousse from the fridge and spread over the ocean layer. I only had one mousse which covered approx 1/2 the slice, so use two for full coverage
Place it in the freezer to set for approx 30 min then cut and store in the fridge
