Raw Mint Chocolate Slice

Ingredients

Base

  • 1 cup rolled oats
  • 1/2 cup almonds
  • 1/3 cup medjool dates (soaked in boiling water for 10 min and then drained)
  • 2 tablespoons milk (I use soy)
  • 1 tablespoon chocolate protein powder
  • 1 tablespoon cacao powder
  • 1 tsp vanilla extract

Peppermint layer

  • 2 cups cashews (soaked in boiling water for 2 hours)
  • 1 and 3/4 tsp peppermint extract
  • 1 tablespoon canned coconut cream
  • 1 tablespoon canned coconut milk
  • 1 tablespoon maple syrup

Chocolate top

  • 2 tablespoons cacao powder
  • 1 tablespoon rice malt syrup or maple syrup
  • 2 tablespoons canned coconut milk
  • 2 tablespoons melted coconut oil

Preparation

  1. Blend the base ingredients until well combined

  2. Press mixture into a baking tray lined with baking paper and place in the freezer

  3. Blend all peppermint layer ingredients until well combined, then spread over the base and put it back in the freezer

  4. Mix all chocolate top ingredients together, pour over the peppermint layer and place in the freezer

  5. Wait at least 2 hours before cutting
