Green Lentils with Orzo
Ingredients
- 2 cups green lentils
- 1 cup orzo pasta
- 4 white onions, finely sliced
- 4 tbsp olive oil
Preparation
Put the lentils in a large pot of boiling water and bring to a boil
Drain the lentils, discard the water and rinse the lentils
Put the lentils back in the pan with fresh water and bring to a simmer
Cook for about 40 minutes till the lentils are soft
Drain
Put the lentils and orzo in the pan over a medium heat, with 1 tbsp olive oil and mix to coat the pasta with the olive oil
Start adding the stock one cup at a time, stirring regularly to ensure the orzo doesn’t stick
As soon as all the stock has been absorbed, add another
You’ll need around 3 cups water for the pasta to be fully cooked
Once you’ve added the three cups (one at a time) check to make sure the pasta is cooked through
If not, add a little more hot water and continue cooking till it’s ready
While that’s cooking, cook the onions in the remaining olive oil till caramelised
When the orzo is fully cooked, add the onions, salt, combine well and serve
Serve with black olives and salad
