Green Lentils with Orzo

Ingredients

  • 2 cups green lentils ⁣
  • 1 cup orzo pasta ⁣
  • 4 white onions, finely sliced ⁣
  • 4 tbsp olive oil ⁣

Preparation

  1. Put the lentils in a large pot of boiling water and bring to a boil

  2. Drain the lentils, discard the water and rinse the lentils

  3. Put the lentils back in the pan with fresh water and bring to a simmer

  4. Cook for about 40 minutes till the lentils are soft

  5. Drain

  6. Put the lentils and orzo in the pan over a medium heat, with 1 tbsp olive oil and mix to coat the pasta with the olive oil

  7. Start adding the stock one cup at a time, stirring regularly to ensure the orzo doesn’t stick

  8. As soon as all the stock has been absorbed, add another

  9. You’ll need around 3 cups water for the pasta to be fully cooked

  10. Once you’ve added the three cups (one at a time) check to make sure the pasta is cooked through

  11. If not, add a little more hot water and continue cooking till it’s ready

  12. While that’s cooking, cook the onions in the remaining olive oil till caramelised

  13. When the orzo is fully cooked, add the onions, salt, combine well and serve

  14. Serve with black olives and salad
