Sticky Ginger Garlic Tofu
Ingredients
- 1 block firm tofu
- 3 tbsp maple syrup
- 3 tbsp tamari (use 2 tbsp if you prefer less salty)
- 2 tbsp apple cider vinegar
- 2 tbsp toasted sesame oil
- 1 tsp fresh ginger, grated
- 2-3 cloves garlic, grated or minced
- 1/4 cup water
- 1 tbsp cornstarch (for slurry)
- 1 tbsp water (for slurry)
Preparation
Press the tofu to remove excess water and cut into cubes.
In a small bowl, mix 1 tbsp cornstarch with 1 tbsp water to make a slurry.
In a pan, heat the toasted sesame oil over medium heat.
Add grated ginger and garlic, and sauté for 1-2 minutes until fragrant.
Add maple syrup, tamari, apple cider vinegar, and 1/4 cup water. Bring to a simmer.
Add the cornstarch slurry to the sauce and stir until thickened.
Add the tofu cubes to the sauce and stir to coat. Cook for a few minutes until heated through.
Serve with brown rice and steamed tender stem broccoli.
