Sticky Ginger Garlic Tofu

Ingredients

  • 1 block firm tofu
  • 3 tbsp maple syrup
  • 3 tbsp tamari (use 2 tbsp if you prefer less salty)
  • 2 tbsp apple cider vinegar
  • 2 tbsp toasted sesame oil
  • 1 tsp fresh ginger, grated
  • 2-3 cloves garlic, grated or minced
  • 1/4 cup water
  • 1 tbsp cornstarch (for slurry)
  • 1 tbsp water (for slurry)

Preparation

  1. Press the tofu to remove excess water and cut into cubes.

  2. In a small bowl, mix 1 tbsp cornstarch with 1 tbsp water to make a slurry.

  3. In a pan, heat the toasted sesame oil over medium heat.

  4. Add grated ginger and garlic, and sauté for 1-2 minutes until fragrant.

  5. Add maple syrup, tamari, apple cider vinegar, and 1/4 cup water. Bring to a simmer.

  6. Add the cornstarch slurry to the sauce and stir until thickened.

  7. Add the tofu cubes to the sauce and stir to coat. Cook for a few minutes until heated through.

  8. Serve with brown rice and steamed tender stem broccoli.
