Spicy Baked Peanut Tofu
Ingredients
- 4 1/2 tbsp tamari
- 4 tbsp creamy peanut butter
- 3 1/2 tbsp maple syrup
- 2 - 2 1/2 tbsp sriracha
- 1 tsp toasted sesame oil
- 1 tbsp water
- 2 small garlic gloves
- small piece of ginger
Preparation
Press tofu, dry with paper towel & cut into small cubes
Preheat oven to 400F
For the sauce, blend the following ingredients with a small food processor or immersion blender: peanut butter, Sriracha, tamari/soy sauce, maple syrup, water, garlic, ginger and sesame oil. You can add a little more water if you’d like the sauce to be thinner
Sprinkle tofu pieces with corn starch
Line a baking sheet with parchment paper and spread the tofu pieces evenly on the pan
Bake for 15 minutes
Remove from oven, coat with a few spoonfuls of your peanut sauce and turn tofu pieces over
Bake for another 10 minutes or until the edges are crispy
Remove from oven, toss with desired amount of spicy peanut sauce and sprinkle with sesame seeds
Use the extra sauce for noodles and other veggies in your bowl or save for another day
