Spicy Almond Tofu Noodles

Ingredients

  • 280g extra firm tofu, cubed
  • 200g broccoli, chopped into florets
  • 2 tbsp tamari
  • 2 tbsp almond butter
  • 1/2 tsp paprika
  • 1/2 tsp sriracha (optional)
  • 1/2 tsp miso paste

Preparation

  1. Add the tofu cubes to a non-stick frying pan and cook for 5-7 minutes, rotating frequently to brown them on all sides

  2. Meanwhile, cook the broccoli in boiling water for around 2-3 minutes, and stir together the tamari, almond butter, paprika, Sriracha and miso paste

  3. Add the broccoli and the sauce to the frying pan and stir for a couple of minutes to combine

  4. Serve with rice or noodles
