Carrot Ginger Oat Seed Energy Balls
Ingredients
- carrot
- fresh ginger
- rolled oats
- unsalted sunflower seeds
- shredded coconut
- cinnamon
- raisins
Preparation
Using a food processor, chop the carrot and fresh ginger into small pieces or use a grater as an alternative.
Combine the carrot, fresh ginger, rolled oats, unsalted sunflower seeds, shredded coconut, cinnamon, and raisins in a food processor and process until well blended and mixed. If the food processor has difficulty blending the mixture to a rollable consistency, add a little extra water.
Roll the mixture into balls and store in a closed container in the fridge. If the mixture is wet, add in additional rolled oats.
