Vegan Almond Breakfast Cookies
Ingredients
- 1 Banana
- 3 tsp Almond butter
- 40g Rolled oats
- 1 tsp Cinnamon
- 3 Dates
- Grated zest of 1 Orange
Preparation
Preheat the oven to 375°F/190°C.
Mash the banana with a fork until it’s a soft puree. Cut each date into tiny pieces.
Add the mashed banana, almond butter, rolled oats, cinnamon, orange zest and dates to a bowl and mix until fully blended.
Drop the dough by the tablespoonful onto a cookie sheet then press down slightly to make cookies.
Bake for 10 minutes, then allow to cool. Enjoy your delicious healthy treat with some fresh fruit on the side.
Tips
This recipe is kid-friendly. Just don't overpromise the 'cookie' when describing them to your little one. And you may want to go a little light on the cinnamon.
