Vegan Almond Breakfast Cookies
Ingredients
- 1 Banana
- 3 tsp Almond butter
- 40g Rolled oats (use gluten-free if needed)
- 1 tsp Cinnamon
- 3 Dates
- Grated zest of 1 Orange
Preparation
Preheat the oven to 375°F/190°C.
Mash the banana with a fork until it’s a soft puree. Cut each date into tiny pieces.
Add the mashed banana, almond butter, rolled oats, cinnamon, orange zest and dates to a bowl and mix until fully blended.
Drop the dough by the tablespoonful onto a cookie sheet and press down slightly to make cookies.
Bake for 10 minutes, then allow to cool. Enjoy your delicious healthy treat with some fresh fruit on the side!
