Easy Sweet Potato Taco Shells

Ingredients

  • 2 cups mashed sweet potato
  • 1 cup cassava flour
  • 1/4 teaspoon sea salt (optional)

Preparation

  1. Make mashed sweet potato by cutting sweet potato into cubes, steaming in a saucepan with 1 inch of water until soft, then draining and using.

  2. Stir the mashed sweet potato together with cassava flour in a bowl until smooth.

  3. Divide the dough into 8 equal pieces, dust a clean surface with cassava flour, and press or roll out into 1/4 inch thick tortillas.

  4. Heat a skillet over medium heat, drizzle lightly with olive oil, and cook on each side until golden brown.
