Peanut Butter Sweet Potato Toast Breakfast

Ingredients

  • 1/2 large sweet potato
  • honey peanut butter
  • bananas
  • cinnamon
  • frozen blueberries

Preparation

  1. Slice the sweet potato into toast shapes.

  2. Broil at 500°F for 10-12 minutes on the bottom shelf or bake at 425°F for 25-30 minutes.

  3. Warm the frozen blueberries.

  4. Top with honey peanut butter, bananas, cinnamon, and the warmed blueberries.

  5. For meal prep, bake the sweet potato the night before and reheat in the morning.
