Easy Vegan Puttanesca Pasta

Ingredients

  • 1 tbsp olive oil
  • 3 garlic cloves
  • 1 tbsp fresh oregano
  • 1 tsp chili (optional)
  • 1 tsp salt
  • 3 tbsp fresh basil
  • 200g fresh plum tomatoes
  • 3 mushrooms
  • 70g whole wheat pasta

Preparation

  1. Add olive oil, garlic, oregano, basil and tomatoes to a non-stick pan and cook for 5 minutes until the tomatoes are soft

  2. Add mushrooms and cook for another 5 minutes until the mushrooms are cooked

  3. Cook your pasta according to the package

  4. Add 5 tbsp of the pasta water to the pan before you drain the pasta water

  5. Now add the pasta to the pan and serve
