Healthy Vegan Coconut Lychee Pistachio Popsicles

Ingredients

  • 1 can coconut condensed milk
  • 1 can lychee (juice drained)
  • 1/4 cup pistachios
  • 1 can coconut cream
  • 1 teaspoon cardamom powder

Preparation

  1. Drain lychee and make a lychee puree in a blender

  2. In another bowl, add coconut cream, coconut condensed milk, and cardamom powder; blend with an electric mixer until smooth for 2 to 3 minutes

  3. Add the lychee mixture and pistachios; mix well

  4. Pour into popsicle molds and freeze for 5 to 6 hours or overnight

  5. Enjoy the popsicles
