Healthy Vegan Coconut Lychee Pistachio Popsicles
Ingredients
- 1 can coconut condensed milk
- 1 can lychee (juice drained)
- 1/4 cup pistachios
- 1 can coconut cream
- 1 teaspoon cardamom powder
Preparation
Drain lychee and make a lychee puree in a blender
In another bowl, add coconut cream, coconut condensed milk, and cardamom powder; blend with an electric mixer until smooth for 2 to 3 minutes
Add the lychee mixture and pistachios; mix well
Pour into popsicle molds and freeze for 5 to 6 hours or overnight
