Vanilla Buckwheat Parfaits
Ingredients
- 1.5 cups soaked and rinsed buckwheat
- 2 dates, pitted
- 1/2 cup coconut milk
- 1 tbsp vanilla protein powder
- 1 tsp vanilla extract
- 1 ripe banana
- 1 cup dairy free yoghurt
- Raspberries and 1/2 pomegranate
Preparation
Soak buckwheat in cold water overnight
In the morning, rinse well under water and add to a food processor
Add in dates, coconut milk, vanilla protein powder, vanilla extract and banana and blend until smooth and creamy
Top with dairy free yoghurt, raspberries and pomegranate arils
