Vanilla Buckwheat Parfaits

Ingredients

  • 1.5 cups soaked and rinsed buckwheat
  • 2 dates, pitted
  • 1/2 cup coconut milk
  • 1 tbsp vanilla protein powder
  • 1 tsp vanilla extract
  • 1 ripe banana
  • 1 cup dairy free yoghurt
  • Raspberries and 1/2 pomegranate

Preparation

  1. Soak buckwheat in cold water overnight

  2. In the morning, rinse well under water and add to a food processor

  3. Add in dates, coconut milk, vanilla protein powder, vanilla extract and banana and blend until smooth and creamy

  4. Top with dairy free yoghurt, raspberries and pomegranate arils
