Vegan Sweet and Sour Chickpeas
Ingredients
- 1 tablespoon tapioca starch
- 2 tablespoons rice vinegar
- 2 tablespoons coconut aminos
- 1 6-ounce can tomato paste
- 1 teaspoon garlic powder
- 1/4 cup water
- Pineapple juice, to taste
- 2 15-ounce cans chickpeas
Preparation
Combine the tapioca starch, rice vinegar, coconut aminos, tomato paste, garlic powder, water, and pineapple juice in a pot
Heat the mixture on medium heat until the sauce thickens.
Drain and rinse the chickpeas.
Add the chickpeas to the sauce and stir to combine
