Vegan Sweet and Sour Chickpeas

Ingredients

  • 1 tablespoon tapioca starch
  • 2 tablespoons rice vinegar
  • 2 tablespoons coconut aminos
  • 1 6-ounce can tomato paste
  • 1 teaspoon garlic powder
  • 1/4 cup water
  • Pineapple juice, to taste
  • 2 15-ounce cans chickpeas

Preparation

  1. Combine the tapioca starch, rice vinegar, coconut aminos, tomato paste, garlic powder, water, and pineapple juice in a pot

  2. Heat the mixture on medium heat until the sauce thickens.

  3. Drain and rinse the chickpeas.

  4. Add the chickpeas to the sauce and stir to combine
