Raw Vegan Snicker Cake

Ingredients

  • 1 cup roasted unsalted peanuts
  • 1 cup shredded coconut
  • 1/2 cup oats
  • 1/2 tsp salt
  • 15 small dates
  • 5 tbsp cacao powder
  • 1 tsp vanilla powder
  • 2 tbsp coconut flour sugar

Preparation

  1. Make bottom layer using a food processor to mix up all ingredients. transfer to a rectangular baking dish and press dough flat with a spoon

  2. For the mid layer: 1 cup peanut butter, 2/3 cup unsalted peanuts, 1/2 cup coconut cream, 3 tbsp maple syrup, 1 tsp vanilla powder, 4 small dates

  3. Make mid layer, pulse a couple of times then spread on top of bottom layer

  4. For the top layer: about 1 cup of coconut cream, 5 tbsp cacao powder, 1 tbsp maple syrup1 tsp vanilla powder, 5 small dates

  5. Make the top layer mixing up all ingredients & pour over. top with chopped peanuts, store in freezer for 30 min then cut and serve
