Baked Chocolate Swirl Cheesecake

Ingredients

  • 50 grams melted chocolate
  • 1000 grams soft cream cheese
  • 1 teaspoon vanilla extract
  • 1 1/3 cups fine-grained sugar
  • 4 large eggs

Base

  • 1/3 cup ground biscuits
  • 1/4 teaspoon cinnamon

For serving

  • Chocolate sauce or toffee sauce

Preparation

  1. Set the oven rack to the middle position and preheat the oven to 160°C.

  2. Grease an 8-inch round pan with butter, line the bottom with parchment paper, and dust with flour. Place it in a larger pan for a water bath.

  3. In a mixer bowl, combine cream cheese, vanilla, and sugar using the whisk attachment on low speed until smooth. Gradually add eggs, mixing until incorporated.

  4. Pour two-thirds of the mixture into the prepared pan. Mix melted chocolate into the remaining mixture and spread over the first layer.

  5. Add water to the larger pan until it reaches halfway up the cheesecake pan.

  6. Bake for 30 to 35 minutes or until set, checking by gently shaking the pan.

  7. Remove from oven, take out of water bath, and cool completely on counter.

  8. Cover with plastic wrap, place on a cardboard base, and flip the cheesecake.

  9. Mix ground biscuits and cinnamon in a small bowl.

  10. Spread and press the biscuit mixture onto the cheesecake.

  11. Flip onto a serving plate and remove plastic.

  12. Top with chocolate sauce and refrigerate until serving.
