Butternut Squash Lasagna Roll Ups
Ingredients
- Frozen butternut squash
- Baby spinach
- Lasagna noodles
- Tofu ricotta
- Onion
- Garlic
- Alfredo sauce
- Mozzarella cheese
- Sage
- Thyme
- Salt and pepper
Preparation
Cook lasagna noodles according to package instructions until al dente
Sauté onion and garlic until softened
Cook frozen butternut squash until tender, then mash or chop
Wilt baby spinach in a pan
Mix tofu ricotta with cooked butternut squash, wilted spinach, sautéed onion, garlic, sage, thyme, salt, and pepper to make the filling
Spread the filling evenly on each lasagna noodle and roll up
Place the rolls in a baking dish
Pour alfredo sauce over the rolls
Sprinkle mozzarella cheese on top
Bake in the oven until the cheese is melted and golden brown

Most components can be prepared a day or two in advance for easier assembly
