Easy Classic Macaroni Salad
Ingredients
- 16 ounces elbow macaroni, cooked
- 1/2 cup apple cider vinegar
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 celery ribs, chopped
- 1/2 red onion, diced
- 10 eggs, boiled, yolks/white separated
- 2 cups mayonnaise
- 2 cups milk
- 4 tablespoons dijon mustard
- 2 tablespoons sugar
- Salt, to taste
- Pepper, to taste
- 2 teaspoons garlic powder
- 1/2 cup sweet relish, plus juice
- Paprika, for garnish
Preparation
Cook macaroni according to package instructions and overcook by 5 minutes. Rinse well with cold water after straining.
Pour apple cider vinegar over macaroni and mix. Set aside.
Peel eggs and cut them in half. Scoop out the yolks and set them aside in a bowl. Chop the egg whites into pieces and set aside.
Mash yolks with a fork until smooth. Add mayonnaise, milk, salt, pepper, garlic powder, and 1 teaspoon of paprika, and whisk until smooth.
Pour mayonnaise sauce mixture over macaroni noodles and mix. Add sugar, relish, mustard, celery, bell peppers, onions, and egg whites. Mix until everything is incorporated together.
Cover and refrigerate for 2 hours to allow the sauce to set. Pour remaining sauce over salad, mix again. Garnish salad with paprika on top. Enjoy!
Tips
Save 1 cup of the sauce mixture to use later for serving in case salad ever gets dry.
