Filthy Gorgeous Potato Salad

Ingredients

  • 800g white potatoes
  • 1 tablespoon salt for boiling
  • 0.5 teaspoon bicarbonate soda for boiling
  • 3 or more spring onions
  • 2 tablespoons mayonnaise
  • Handful of chopped chives
  • 2 teaspoons honey
  • 2 teaspoons wholegrain mustard
  • 1 teaspoon yellow mustard
  • 140g smoked lardons or bacon or turkey bacon
  • Salt and pepper to taste
  • Oil for roasting
  • Garlic for roasting
  • Rosemary for roasting
  • 1 tablespoon butter

Preparation

  1. Parboil the potatoes for 10 minutes with salt and bicarbonate soda.

  2. Air dry the potatoes on a rack.

  3. Roast the potatoes at 220°C until golden, about 50 minutes, turning regularly; add oil, butter, garlic, and rosemary before roasting.

  4. Cook the smoked lardons or bacon until crisp.

  5. In a bowl, mix mayonnaise, honey, wholegrain mustard, and yellow mustard to make the dressing.

  6. Chop the spring onions and chives.

  7. Combine the roasted potatoes, cooked bacon, spring onions, chives, and dressing; season with salt and pepper to taste.

Tips

  1. Use bicarbonate soda in boiling water for better potato texture.

  2. Remove garlic and rosemary from the oil after 15 minutes to prevent burning and bitterness.

  3. Add a tablespoon of butter to the oil for roasting.

  4. Air dry potatoes on a rack to achieve crispiness before roasting.
