Baked Sweet Potatoes with Avocado Topping

Ingredients

  • 2 sweet potatoes
  • 1 avocado
  • soy yogurt or creme fraiche
  • chili, salt and pepper
  • lime or lemon
  • sesame seeds
  • basil

Preparation

  1. Cut potatoes in half lengthwise.

  2. Place on a baking tray and bake in the oven at 175°C for 20-25 minutes until soft.

  3. Allow to cool.

  4. Serve with avocado, yogurt, basil, sesame seeds, chili, lemon, salt and pepper.

  1. This is a favorite side dish that can be made almost every week with different toppings and seasonings.
