Baked Sweet Potatoes with Avocado and Toppings

Ingredients

  • 2 sweet potatoes

Toppings

  • 1 avocado
  • soy yogurt or creme fraiche
  • chili, salt and pepper
  • Lime or lemon
  • Sesame seeds and basil

Preparation

  1. Cut the sweet potatoes in half lengthwise

  2. Place on a baking tray and bake in the oven at 175°C with hot air setting for 20-25 minutes until soft

  3. Allow to cool

  4. Serve with avocado, yogurt, basil, sesame seeds, chili, lemon, salt, and pepper

Tips

  1. This is one of my favourite side dishes, an oldie but goodie

  2. Make it almost every week with different toppings and seasonings
