Baked Sweet Potatoes with Avocado and Yogurt

Ingredients

  • 2 sweet potatoes
  • 1 avocado

Toppings and seasonings

  • soy yogurt or creme fraiche
  • chili, salt and pepper
  • lime or lemon
  • sesame seeds and basil

Preparation

  1. Cut sweet potatoes in half lengthwise

  2. Place on a baking tray and bake in the oven at 175°C (hot air) for 20-25 minutes until soft

  3. Allow to cool

  4. Serve with avocado, yogurt, basil, sesame seeds, chili, lemon, salt and pepper

Notes

  1. This is one of my favourite side dishes, an oldie but goodie that I make almost every week with different toppings and seasonings
