Baked Sweet Potatoes with Avocado and Yogurt Toppings

Ingredients

  • 2 sweet potatoes
  • 1 avocado
  • soy yogurt or creme fraiche
  • chili, salt, and pepper
  • lime or lemon
  • sesame seeds and basil

Preparation

  1. Cut the sweet potatoes in half lengthwise

  2. Place the sweet potatoes on a baking tray and bake in the oven at 175°C using hot air setting for 20-25 minutes until soft

  3. Allow the sweet potatoes to cool

  4. Serve with avocado, yogurt, basil, sesame seeds, chili, lemon, salt, and pepper

Notes

  1. This is one of my favourite side dishes, an oldie but goodie that I make almost every week with different toppings and seasonings
