Baked Sweet Potatoes with Creamy Avocado Toppings
Ingredients
- 2 sweet potatoes
- 1 avocado
- soy yogurt or creme fraiche
- chili, salt and pepper
- lime or lemon
- sesame seeds and basil
Preparation
Cut potatoes in half lengthwise
Place on a baking tray and bake in the oven at 175°C with hot air circulation for 20-25 minutes until soft
Allow to cool
Serve with avocado, yogurt, basil, sesame seeds, chili, lemon, salt and pepper

This is one of my favorite side dishes, an oldie but goodie. Make it almost every week with different toppings and seasonings
